This Ultimate Veggie Chilli is packed with cauliflower, adzuki beans, mushrooms, red peppers and tomatoes – and comes packed with plenty of flavour thanks to a few unusual ingredients – including a shot of whiskey… 😉
When I get an invite to pop along to the November Warrior Women Event – the theme of which is “Women at the Top” – I’m in all honesty, a little unsure. I imagine a room packed-full of seriously intimidating women, all successful, all smart, all confident and absolutely bossing it (and quite possibly all kitted out in suits with shoulder pads like Melanie Griffith in Working Girl). Would I comfortably fit into that room? Little old me? Would I come away feeling inspired, or…. deflated?
Roasted tomatoes and peppers, chipotle chilli paste and coconut milk make up the creamy stew to this ultimate winter warmer, while the added onions, borlotti beans and butter beans bring in a little texture. It doesn’t look like much, but it’s absolutely delicious (and, it’s vegan friendly) – definitely one to whip up on the weekend and enjoy all week…
A couple of weeks ago, Sunny came back from work with a rough print out of a chocolate brownie recipe that been pinging around the office via email which claimed to make the best ever brownies. I mean, you can trawl the internet for hours searching through millions of recipes claiming to make the best ever brownies, or sift through cook books – but, the truth is, I’m far more likely to pay attention to recipes on scraps of paper that are passed from person to person. Those kind of recipes are gold dust. And so, I gave it a go one Sunday and by ‘eck, they’re good.
I absolutely adore Cardiff at Christmas time. I love trotting up and down the high street to the tune of the Salvation Army and I love pottering around in the Arcades for those quirky, one off gifts that I simply can’t find online or elsewhere.
