Indian Spiced Cawl

Not only is soup the perfect meal to come home to when you’ve been out in the cold, but it’s also so easy – whether you get it out of a tin or cook it from scratch.  And when it gets cold enough here in Wales we don’t sip soup, we slurp Cawl.  In case you didn’t know, Cawl is a Welsh soup traditionally made with lamb and whatever root vegetables happen to be lying around in your cupboard (the word “Cawl” can also mean to make a mess of something).   For this version I’ve spiced things up a bit; I’ve kept the base recipe traditional, but have flavoured the lamb and stock with some Indian spices and fresh coriander.  It’s all served up with some toasted naan bread – yum!

5 Things I’ve Been Loving This September

Can you believe it’s going to be October next week?  Yikes!  It feels like we were in the middle of a heatwave just last week and now we’re practically staring down Christmas (sorry!).  Still, I’m really excited for the next couple of months – Autumn is my season, my favourite time of year hands down – and I love that fresh feeling that’s always in the air every September.  And with that in mind, here are a few other things I’ve been loving this month.

Halloumi Bread with Fig Jam

I tried making this Halloumi Loaf in the bread maker twice and it just did not work.  The first time the machine broke up all the lovely chunks of halloumi until they were were practically invisible, and the second time the loaf was just too dense.  So I tweaked the recipe a little and tried it by hand and whaddya know?  It not only worked, but my oven spat out the softest loaf I’ve ever made.  AND it’s got chunks of cheese inside it.  Banging.  Take that, technology!
